APPLE CAKE WITH VELVETY VANILLA SYRUP

The rolled oat topping on this cake adds a tasty crunchy topping

INGREDIENTS:

150g Alfa One Rice Bran Oil Spread
½ cup brown sugar
2 eggs
400g can diced apple
½ cup milk
1 tablespoon Hansells Natural Bitters Essence
1 cup wholemeal flour
1 cup flour
2 teaspoons Hansells Baking Powder
Hansells Gourmet Vanilla Extract with Seeds

Topping
½ cup rolled oats
¼ cup flour
¼ cup brown sugar
50g Alfa One Rice Bran Oil Spread
 

SERVING SUGGESTION:

Serve warm with softly whipped cream and drizzled with Gourmet Vanilla Extract.

INSTRUCTIONS:

Place oil spread and sugar in a saucepan large enough to mix all the ingredients.

Heat, stirring until oil spread melts. Remove from heat.

Lightly beat eggs. Mix in apple, milk, bitters and eggs into the saucepan mixture.

Sift in flours and baking powder and mix to combine. Pour into a lined 20 cm round cake tin.

Topping: Mix oats, flour and sugar together in a bowl. Melt oil spread and mix through dry ingredients. Sprinkle on top of the cake.

Bake at 180°C for 1 hour or until an inserted skewer comes out clean.
